New Orleans in 12 Plates, From Toronto
Air Canada flies Toronto–New Orleans nonstop this winter and Mardi Gras falls on 9 February 2027. Twelve dishes to build a food trip around.
New Orleans is one of the few US cities where the food alone justifies the flight, and from Toronto that flight is under three hours. Air Canada operates Toronto Pearson–New Orleans nonstop this winter; schedule data show three weekly departures in early November 2026, on Tuesdays, Thursdays and Saturdays, at about 2 hours 50 minutes. Air Canada‘s own fare pages showed one-way economy from C$447 for October travel. Then there is the calendar: Mardi Gras falls on Tuesday 9 February 2027, early enough to escape a Canadian February at its worst.
New Orleans & Company, the city’s tourism board, publishes two lists worth using as a map: its 17 most classic restaurants and 26 dishes to eat in 2026, chosen by local chefs, writers and performers. Here are 12 plates from those lists, in roughly the order to eat them.
The classics
- Oysters Rockefeller at Antoine’s Restaurant. The French Quarter dining room is more than 180 years old, according to the tourism board. Finish with baked Alaska.
- Gumbo at Dooky Chase’s Restaurant. Go on Holy Thursday (25 March in 2027) for gumbo z’herbes, the green gumbo it serves once a year.
- Turtle soup and bread pudding soufflé at Commander’s Palace. The soufflé appears on both of the board’s lists.
- Shrimp rémoulade at Galatoire’s, with crabmeat maison and turtle soup as the other house classics, the board says.
- Bananas Foster at Brennan’s, where the tourism board says the dessert was invented in the early 1950s. Order it with Eggs Hussarde at brunch.
- Beignets at Café du Monde. Go early or late to avoid the line.
Sandwiches and the casual canon
- Muffuletta at Central Grocery, the board’s pick for the city’s signature sandwich.
- The surf ‘n’ turf po-boy at Parkway Bakery & Tavern, fried shrimp and roast beef with gravy on one roll.
- Barbecue shrimp at Mr. B’s Bistro. Despite the name, it is not grilled; the tourism board credits Pascal’s Manale with inventing it, so eat it at both if you can.
Where locals send you now
- Le Pig Mac at Cochon Butcher. Herbsaint, from chef Donald Link, gets a separate nod for duck leg confit with dirty rice.
- Whatever is on the specials menu at Pêche, chef Mason Hereford’s pick; he singled out the crab rice.
- Oysters Mosca at Mosca’s Restaurant, outside the city centre, recommended by food writer Brett Anderson. Plan a car for this one.
The 2026 list also stretches well beyond Creole cooking: Vietnamese banh cuon at Ba Mien, Trinidadian doubles from Queen Trini Lisa, Thai khao soi at Budsi’s in the Marigny and whole fried snapper at Addis NOLA. That range is the city’s surprise for first-timers.
Where to stay
The French Quarter puts most of the classics within walking distance. The tourism board’s partners reported that the Omni Royal Orleans renovation, with a new lobby bar, music lounge, coffee shop and rooftop bar and pool, was scheduled for completion in early 2026. The Garden District is quieter and puts Commander’s Palace close by.
When to go
- November to January: mild weather and the holiday season; good for a food-first trip without crowds.
- Carnival season: parades build through January and peak in the days before Mardi Gras, 9 February 2027. Hotels and restaurants book out early.
- Spring: festival season, and Holy Thursday for gumbo z’herbes.
Plan it
- Flights: Air Canada nonstop from Toronto Pearson. From other Canadian cities, connect in Toronto or a US hub.
- Reservations: book Commander’s Palace, Galatoire’s, Brennan’s and Dooky Chase’s before you fly; walk in to po-boy shops.
- Costs: at about 70 US cents to the loonie in early October 2026, a $150 dinner for two is roughly C$214 before tip. Budget 18% to 20% tips on top of US menu prices.
- Note: Willie Mae’s main location is temporarily closed for fire repairs, according to New Orleans & Company; its second location, Willie Mae’s NOLA, is open.
