Advisors selling Zermatt this winter have two new tables to book. In December 2026, CERVO Mountain Resort opens two concepts in the village, and the one to watch seats eight.

Yama Noir and Matsunozushi 79

Yama Noir is an izakaya and sake bar inspired by 1980s Tokyo, in the former Le Chalet restaurant. It is a collaboration between CERVO, its co-founder Daniel F. Lauber, Zermatt entrepreneur Koji Nishinaga and sushi chef Yoshinori “Yoshi” Tezuka. Inside is Matsunozushi 79, an eight-seat Edomae omakase counter.

Tezuka runs Matsunozushi in Shinagawa, Tokyo, a family business founded in 1910 and now in its fourth generation, according to the Japan National Tourism Organization. The resort says he once worked as a ski guide in Zermatt.

Burning Deer

At Bahnhofplatz, by the station, Burning Deer is a 22 sq m specialty coffee and bagel bar with what CERVO calls an “Alpine trading post” shop. The resort says it will show porcelain by US artist Molly Altman, made during an October 2026 residency, and David Yarrow’s photograph Woody Creek Tavern (2022). Après means Espresso Martinis and Champagne.

The resort

Seraina and Daniel F. Lauber founded CERVO in 2009. It has 54 rooms and suites across the Nomad, Alpinist and Huntsman lodges, plus Overlook Lodge apartments, ski-in/ski-out with a private lift down to the village. Restaurants are Bazaar, which the resort describes as Michelin-recommended, Madre Nostra, Ferdinand and Grapes & Juniper, with the Ātman Mountain Spa. CERVO says 99% of its energy comes from geothermal sources and heat recovery. It belongs to Design Hotels and Virtuoso.

Rates start at £1,170 per room per night with breakfast, according to the release. The resort closes from mid-April to the end of May and from mid-October to the end of November.

Her first flight was to Orlando, and she still remembers how kind everyone was. She's a window-seat loyalist (somewhere to rest your head), eats whatever the locals recommend (schnitzel and an Austrian beer, the moment she landed in Vienna), and always packs spare underwear. Just in case. Hallstatt on a sunny day is her “this is why I travel” moment, the Highlands are where she'd go back tomorrow, and South Korea or Japan is next. Friends say bubbly, caring and fun. Her mum says chaotic but organized.
